Mango Salsa. Yum!

We finally wrapped up Elijah's school year and had a little celebration barbeque this weekend over at my parent's house.  I made this very yummy mango salsa especially for my Dad who loves mangoes.


I got the recipe from the Better Homes & Gardens website and tweaked it a little bit.
  • 1 1/2 cups of chopped & peeled mango (one large mango)
  • 1/2 cup of green bell pepper (1 whole)
  • 1/4 cup thinly sliced green onions (2 whites and greens) 
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice (I used the juice from 1/2 a large lime) 
  • 1-2 jalapeno peppers, seeded and finely chopped (I used 1/2 a pepper because mine was REALLY hot) 
In a medium bowl stir together the mango, bell pepper, green onions, cilantro, lime juice and jalapeno pepper (I also added kosher salt and ground black pepper to taste).  Cover and chill at least two hours before serving.  
 
I served mine with multigrain chips and it was supper yummy.  Even my very picky son loved it.  Good thing I took a picture of it as soon as I put it on the table because it went fast.    
 
I also made an avocado salad but I forgot to take a picture of that.  It was a big hit too.  I'll make it again soon and share the recipe and photos with you.
